I know this is for Belgians but Malt Vinegar simply cannot be beat
I mean, look into the insane amount of sauces available. Even if you say it can’t be beat you could try them all and discover things you can add to what you already like. Most Belgians don’t just stick to one sauce.

The most spicy available, usually samourai but my local friture has a lovely special spicy american sauce
“Pommes Schranke”, mayonnaise and ketchup.

They should be fresh, although I’ve seen versions with roasted ones too.
I love it.
Interestingly it tastes much better like this than a Single premixed sauce made from mayo and ketchup.
