Just a few handfuls of whatever sultanas/currants/mixed fruit I have, a bit of mixed spice and a spoonful of brown sugar. If I’m feeling fancy enough to use an actual recipe I use a hot cross bun recipe that works nicely for a loaf too: 600g flour ( 4 cups) 1 tsp dry yeast 1 tsp nutmeg 1 tsp cinnamon 1/2 tsp salt 80g caster sugar (1/3 cup) 80g butter - rub into dry ingredients 1 egg, lightly beaten 1 cup milk 1/3 cup water 180g sultanas Prove, divide, prove & bake Makes 12. 200 degree oven 15 mins loaf: 1/2 quantity, 110g fruit, small tin.
